Yay! Its’ the weekend again! Who doesn’t love weekends, right… My ideal weekend is sipping on a glass of homemade Long Island Ice tea while my husband grills tandoori chicken in the backyard, with friends, of course :). Its’ been a while since I did this though, thanks to busy schedules!
This time of the year, India is flooded with fresh, plump, red, not so sweet strawberries. Sources tell me small strawberries are far sweeter than the big pretty ones. I’m not sure how true it is, as I haven’t really tasted a sweet strawberry. I love the tart ones too.
I make a syrup with strawberries and shove it in the refrigerator. It lasts anywhere between 3-5 days. I use the syrup with chunks of strawberry in my oatmeal, smoothies, and pancakes or just drizzle over a scoop of vanilla ice cream. Weekend does this to me 😉

What you need,
Really quickly then, rinse, clean and slice the strawberries. Add sugar and water to the fruit in a saucepan.
Bring the mixture to a rolling boil and simmer covered for 3-4 minutes. Put off the fire and cool the mixture completely.
That’s the versatile syrup I was talking about. It’s red, thick and has chunks of softened strawberry! Aaaaahh… love love!
Now, for the mojito, squish halved lime and mint leaves with a pestle… a baseball bat will work as well 😉
Measure 30-40 ml vodka and pour into the glass. Top the glass with ice cubes and sprite.
For the final beautiful step, spoon over some of that decadent strawberry syrup and voila!

- For the strawberry syrup,
- Strawberries 14-15
- Sugar 2 tbsp
- Water 2 tbsp
- For the mojito
- Vodka 30- 40 ml
- Lime 1
- Mint leaves 6-7
- Ice cubes
- Sprite to top up
- Strawberry syrup 2 tbsp
- For the strawberry syrup, slice strawberries, add sugar and water and bring the mixture to a rolling boil. Cover and simmer for 3-4 minutes. Cool the mixture completely.
- In a glass, squish lime and mint leaves with a pestle.
- Pour vodka and top the glass with ice cubes.
- Pour sprite to fill the length of the glass.
- Spoon over strawberry syrup and serve immediately.
