Potato Wedges


I do not know a single soul that dislikes potatoes! Although I know many that avoid for good reasons… It’s ridiculous how versatile this vegetable is and also how starchy it is. As a child, I remember making a meal out of it. I’m guessing every person goes through the ‘I only eat potato’ phase. I was a fussy eater… I wish I remained one 😉

Wedges are my favourit’est’ more than fries. I love the whole herby spiced thick potato rather than thin lanky fries that disappear soon. My friends and I, once upon a time, made a meal out of potato wedges at burger joints as we were foolish enough to think we were eating little to stay in shape (anorexic).

I tried to replicate the wedges from my favorite burger joint. Bang on! They were peerffeecct! It’s so simple and so unhealthy but so delicious. That obviously led me to trying a healthier baked version that was as delicious.

All you need is,

Scrub the potatoes and boil them until a knife pierces easily through it. Make sure not to completely boil and make a mushy mash out of it. This should take 10- 12 minutes.

Drain and cut into wedges.

As promised, there is a baked and fried version.

For the baked version, sprinkle corn flour over the wedges.

Add the herbs, garlic powder, chili flakes and salt. Toss gently.

Spread the potatoes on a lined baking tray and drizzle over oil.

Bake at 220 C for 45-50 minutes with gentle stirs every 15 minutes.

The fried version is less cumbersome and quick… perfectly suited for a party.

Make a thick paste of corn flour with water and add the herbs, chili flakes, garlic powder and salt.

Heat oil in a deep fryer or a deep pan, as I did, and fry the corn flour coated wedged for 1-2 minutes on a medium high flame until golden brown.

I know of the poor clarity of that image but I was scared of the oil spurting on my precious lens.

Potatoes 4

Corn flour 5 tbsp.

Chili flakes 2 tsp.

Garilc powder 1 tsp.

Mixed herbs 2 tsp.

Salt to taste.


Method to bake

Boil potatoes until a knife pierces easily. Cut them in wedges, sprinkle corn flour, garlic powder, mixed herbs and salt. Toss and spread on a lined baking sheet. Drizzle oil and bake in a preheated 220 C oven for 45-50 minutes tossing around every 15 minutes.

Method to fry

Heat oil in a fryer. Make a thick paste of corn flour and water 1:2 ratio and add herbs, chili flakes, garlic powder and salt. Coat the wedges in the batter and fry for 1-2 minutes on medium high heat until golden brown. Serve immediately.
