Chicken is not exactly my most favorite meat. I prefer dark and unhealthy 😉 Chicken can get pretty monotonous. So I always try and play around flavors with chicken. This chicken is stuffed with cheese and wrapped with bacon. Can it get any better? Let’s begin…

You can stuff the chicken with anything you like. I’ve used pine nuts and ricotta couple of times, pepperoni, tomato pepper salsa and so many more.

I made my own pesto as I prefer fresh to packaged. All I did really was grind basil, walnuts, a garlic clove, season and douse in olive oil.

To begin, butterfly the chicken breast. For amateurs like me that have You tube open already, here’s how you do it.

Place the chicken breast on the board as shown below.

With a sharp knife, slit midway until you open the chicken like a butterfly.

DO NOT slice all the way through.

That’s the hard part done. Now place the butterflied chicken between two sheets of cling film.

I hate cling film! Reminds me of some of my boyfriends 😉

With a mallet or a dumbbell (haha…) bash the living daylights out of the chicken to flatten evenly.

Uncover the side facing you and season the chicken generously with salt and pepper.

Spread pesto all over.

Cut up the sausages and scatter.

Crumbled mozzarella…

That’s the stuffing done.

With the cling film for support, begin rolling the chicken into a cylinder. Choose the appropriate end to begin. I chose the left hand side.

Wrap it until it looks like a candy.

Refrigerate for 10-15 minutes.

Lay the slices of bacon on cling film and unwrap the chicken carefully. Place the chicken on one end of the bacon.

And rollllll…

I always use cling film for support.

Tie up the chicken all around the edges.


Bake in a preheated 200 C oven for 30 minutes.

Give the chicken resting time of around 10minutes before slicing through.

Slice the beauties and serve.

The result is browned bacon and juicy chicken with melted cheese and pesto. I really can’t convince you more.

You’ve got to try this.

I made a butter wine reduction in the same sauce pan and drizzled over.

Chicken breasts 2

Pesto 2-3 tbsp


Sausage 2-3

Bacon 8 slices




Butterfly and flatten chicken breasts as shown above. Season with salt and pepper. Smear pesto, crumbled mozzarella and sausage chunks. Roll to resemble a candy and refrigerate for 10-15 minutes. Place bacon slices and roll the chicken along with the bacon with a cling film. Tie up the chicken to secure tightly. Bake in a preheated 200 C oven for 30 minutes. Rest for 10 minutes. Slice and serve.
