Love doughnuts? Yeah, so do I. Ain’t got no patience to go through with the long wait, the fermenting and doubling. I usually walk into a doughnut ‘bar’, where people get high on doughnuts, and get myself one. There are these cold days when I’d rather stay indoors. Today is one such.
While lazing and browsing, I came across what’s called Bunuelos, apparently a Columbian version of instant doughnuts. They use a variety of cheese queso fresco which is obviously hard to find. When I looked it up, its’ closest substitute was cottage cheese. I was super excited as I had some lying in the refrigerator. Both these are made in a similar fashion. I couldn’t lie in bed any longer. I had to satisfy my craving! My womb is empty, I swear, Mom!
This is all you need
I reckon you use firm cottage cheese as it works better here.
Pat dry the moisture from the cottage cheese with kitchen towels.
Chop up the chocolate into bite size pieces.
In a food processor, blitz the cottage cheese, roughly torn, and sugar until crumbly.
Into a mixing bowl, add an egg, crumbled cottage cheese and sugar mixture and corn flour. Mix thoroughly.
The mixture is going to seem extremely sticky at this point. That’s perfect 🙂
Refrigerate the mixture for 30 minutes.
Oil your palms and begin to make the dough balls.
The chocolate is completely optional. I make a mix of plain sugar balls and a few with chocolate.
Flatten the cheese mixture and place the chocolate and shape into tiny balls.
This part is definitely messy. I feel the need to wash my hands with every alternate rolling as it tends to stick to the palm.

Heat enough oil in a saucepan. Drop the balls in with the fire on the lowest setting. These balls will sink at first and rise as they cook.
The doughnuts take 10-12 minutes in the oil.
They rise and roll around on their own.
When golden brown, dredge in sugar and serve hot!

|Instant Chocolate Doughnuts|| |
- Cottage cheese 200 gm
- Sugar 3 tbsp.
- Cornflour 4 tbsp.
- Egg 1
- Oil to fry
- Castor sugar to coat
- Chocolate bits
- Pat dry cottage cheese and blitz with sugar until crumbly in texture. Mix with egg and corn flour. Refrigerate for 30 minutes. Heat oil. Grease your palm with oil. Make equal size balls, flattening and inserting a piece of chocolate if making the variation. Fry the doughnuts for 10- 12 minutes until golden brown. Roll in castor sugar and serve hot.
